They gained the ability to don their Hollow mask through trials.
So "Visored" are still Shinigami without their masks. And they don't have a hole in a part of their body
All Arrancar gained Shinigami Powers from Aizen's Hogyoku experimentations right?And they are still hollow, as denoted by the hole in a part of their bodies

Mainly yes, visord = shini hollofied
Arrancar/espada = hollow gaining shini zans and skills
If we talk about manga i will say Shinigami>Quincys>Hollows

You got it wrong too. It is Shinigami or Hollow. Qunicy aren't really a thing. Vizards are Shinigami who have been given some hollow like attributes. Arrancars are Hollows who have been given Shinigami like attributes. This is all clearly explained in the manga.
Quincy are just humans with a higher than normal spirit power who use artifacts in order to absorb and concentrate background Reiatsu. Anyone could be a Quincy if they had one of those artifacts, even a Shinigami or Hollow.
I realize that the manga jumped the shark after Ichigo beat Aizen and tried to pretend that Quincies were a bloodline thing. But that is a huge retcon that makes ZERO sense. The real Bleach (ie Bleach from Soul Society arc and earlier) is quite clear that Quincy powers come from the artifacts and nothing else. Their none artifact abilities are just Reiatsu and spirit particle manipulation that is no different from Kido, which is just Reiatsu/spirit particle manipulation. Anyone could do that if they trained to do it.

His question = which clan should he choose in-game (Shinigami/Quincy/Arrancar)
Most of the time its shinigami clan that's being dominant by having more stronger/vip players
Quincy isn't bad but they are not as dominant as Shinigami
As for Arrancar in most of the servers its the one with the least amount of strong/vip player.
*So in the end you have to judge by yourself whether will it be shinigami or quincy that dominated your server.*

DPENDS ON THE SERVERS OFC, most of time shini are dominent cuz this game is based on the shiini gotei division caps n stuf and al players tend to play in shini clan, also the ghodt sword chars is more used ans easier to build a team balanced witj him, since he's a shini chars it may explain a litle also, as for arrancar sorry to tell you wilson, but there is a lot of strong arrancars everwhere, in my server we're 4 arrancars in top 10 for example, 2 quincies and 4 shinigamies, ofc 1st is shini 2nd is arrancar close to him, 3rd is shini 4rt rrancar then 5th quincy in another server i know arrancar people dominating the server from bottom to head,
at the end of the day it al depends on wether have an easy life or not, if you don't wanna rough path take shini ofc
How do you join a clan?
All the arrancar are not a result of Aizen's experimentation. The 1XX Arrancar were the ancient espada before Aizen came in Hueco Mundo and start his experimentation
Arrancar is based on 3 types of hollows
Menos grande,
Gillian, the 11 numbers n higher ( hogyoku)
Vasto lorde, ie the espada dudes ( hogyoku)
Shinigami Clan, cause the Phoenix Yamamoto, Tricky Urahara, Old Man Isshin, and Berry Mugetsu resides there.
