So I am currently lvl75 and I am gold ranked DTW lvl25 and have Kenny soul mod. I have sajin as a vanguard and I have 1000 gold souls and almost have enough to buy Byakuya. So my dream team is Ghost Blade Main, Byakuya, Sajin, Haribel, Yoruichi/Ukitake. What do you guys think I should do?

Well as a VIP 0 it is best to go full pve focused so its not wise to go for Byakuya unless you end up being Top 100 in CSB and above level 100 to do void region, then Byakuyas death mod is really good there. Otherwise Ikkaku is a beast for PVE and eventually you should grab Kisuke as one of your supports.

but I doubt anyone at 100 can even hit the void so he would get dodged and only get zan damage

So I should buy Byakuya?
