Well just the formation doesn't give all the information needed to decide what kind of unit you need tbh if you're going offensive then stark is a good choice since hollowed ichigo is liked a buffed up nnoitra or something like that

Coyote Stark (Exclusiv Lv 35) = Attack all enemies , growth rate is 200% , increase own dodge rate by 100% and decrease enemies hit rate by 15% (PVP)

Hollowed Ichigo (Exclusiv Lv 35) = Attack Vanguard , growth rate is 220%,  increase own defense by 50% for 1 round and restore own HP, growth rate is 50% (PVP and PVE)

This question has more to do with your zan than just the team partners tbh.
Unless you have a zan that can assist in vanguard damage rate i.e:Hyorinmaru,SenbonmTensa,Katen,Kyoka,Ryujin,Minazuki. Stark will really not work to his fullest potential even after red tavern upgrade and he requires alot more Spirit stone Investment overall so you will need to stack him alot to win otherwise he will be far to squishy and be killed b4 he gets his exclsuive off but if you do meat this criteria stark can be better.
As for Hollow ichigo he is a defensive build he does have the Aid rate but thats not his main draw he exsists to Tank hits by the shear virtue of his natural stats and bulk and has a HP recovery skill to help that. His exclusive if he gets it off allows him to become sajin on roids in a basic sense and do achieve this he does not his as much investment or a specific zanpaktou like stark and can work rather well without them his aid rate allows him to have utility for Assaulter line if you do need it and with Mod Change available you can really build up his block to a very respectable level and he can outlive most battles with a good build(unless mutilate or Muken/HVI are involved) and he works better in PVE(Excluding Void) but its better to run a 0-3-2 formation thier anyways unless you have a zan to support a van focused one.
