You unlock instance at lv30-50-70-80-90 on one of the three stages map ... You need to do a certain number of them

a instance is a dungeons if your one of those people who play's 3D mmorpg's or where you can farm the material for gear to create it. Its also as kannebankai said  the places in each of the maps (human world, soul society, hueco mundo) with the lv30-50-70-80-90 just under the icon for it on the maps.

You need to be lvl 100 to complete the task without the need to reset on of them :-)
