I can choose the character that attacks first? for example, my main attacks first, but I'd rather be the support the first attack.

it's up to your speed if your support has high speed in your team she/he attacks first

yes you can choose which member of your team attacks first and not necssarly the main or supp; to do so equip all your agility stones in the partner you want to begin with first, but also put the higher hogyo gem speed on him + the agility hogu from trials, finally choose the zanpakty which give the most speed ot the partner position you want to begin with.
PS: having a high speed character and all the others slow can have a bad effect specially if the battle lasts longer; or you have shini yoruichi from event
