Can I know which spirit stones should I replace with block stones?

Block stones are only good on the VG since you will start by building your VGs blockrate then when you have gotten it up trying on anyone else is near pointless. Just using a few will not give you anything since most enemies will have way better break defence and simply ignore your block. Sure you can get a lucky proc in PVE but how often is your main actually hit in PVE?
For main I personally use: Str/Wis depending on main, Agi since speed is the key, Stamina to boost survival, Hit and break defence so you can hit and not be blocked, Crit well more damage is good in both PVE and PVP and when you crit you regain 100 fury instead of 50, lastly some counter stones to boost survival. Once your hit and break defence starts going over 190-200/90-100 you will basically dont need them any higher most of the time so you can start replacing those stones and counter is in my opinion the best add.
I use the same setup on everyone except for vanguard.
If you have Ishida Ryuken so is dodge stones a good add but no other assaulter have a dodge rate good enough to ever need them. And yes dodge overall turns into the worst stat of them all with time, most cap at 90% and some can have 100% but getting that high is far harder than getting most of your team to 190-200% hit chance which fully negates that dodge.

Counter stones are the best way to go

you will most likely never block later on in the game as everyone will have 90% break defence or more, so they will never get blocked by you ^^

BUT counter, well you can always counter! ^^ Put those on your main, defending against a crit attack is definitely the biggest difference in defence on this game by stats and excluding chances like aid rate ^^

Definitely fury stones and if you place them right you can get your main to skill on first turn
