So I wanted to know if Zabimaru is obtainable by reaching the requirements for it. I heard, somewhere, that if you reach those requirements you get it sent by email even if you can't open your own achievement window. Is it really true? Or we're stucked with zanpakutos from main quests and honor shop only?

No you can't get it until they release the achievement page. It is not sent in the mail, whoever said that lied.
