Sado is a clear choice as sajin can replace him with the same set. Moreover, block is better than dodge as you can get hit as an attribute in your equips, but not block break.

I personally use Yachiru at 80. King hollow map espada 4 and 3 pass succefuly (need to be 79 for last group challenge espada 3). She as a very good survival rate. In GW and seretei defence she the last one of my team most of the time. And i can expect to kill easily low level with only her and zanpakuto Ashisogi Jizo. (She don't take damage and Ashisogi damage all opponent team base on BP value.
Need to focus her dodge ability too,  and set it up at max (min 90% dodge rate) (spirit stones Dodge/block/counter/stamina/strengt and wisdom - strenght and wisdom only for resilince)
She don't do any damage so if u use a Physical damage main character, u can save strength stone for this one.
U barely need to equip her first in u're team with best tanks item (full set armor + stamina/strength and kido Hogu for resilience). Same for Hogyoku items (kido/physical and stamina).

Good point : In pvp most of the players use defense break spirit stone and not hit stone. So u can easily dodge them.

Bad point : at lvl 70 u cannot equip all hogu find in trial tower event. It's a purple character, and u cannot equip Agility and stamina Hogu. So focus on a set of two purple hogu lvl 6 for stamina and agility. U won't have best for her.

sado is the better one. but when you get to level 70 you should switch to sajin, yachiru is not a good choice unless you want to spend a lot of gold getting her dodge to 90%.

Break Defense is the alternative to HIT for dodge, so yes you can break block just as easily with the right stones.

But Sado is better overall , more tanky than yachiru by default.
Both block and dodge are viable in the early game, but block becomes better later, while dodge falls off, even tho dodge has greater impact in PvP fights because it disables Fury gain.
