gold is primarily use on shop, ultimate equipment shop, and skiping CD time. Coupons are an alternate for gold you can not use coupons for the shop and ultimate equipment
also you can use gold to give you more points on upgrading things like your reiatsu and zanpakuto cultivation. So in general gold is worth more than coupons and coupons will always be used first before taking gold if there is a choice between those two
as of now I'm pretty sure the only thing you can't use your coupons are is the ultimate shop and than also the throw dice at your house, I've used coupons many times to buy spirit jades from shop so they work there, and eventually when events come out that require gold to be spent on the pop up from clicking the window you need gold to active more chances like in UN if you've played that. ex you have to fight mini monsters and you do x damage to it every hit and can hit twice or three times before you have to wait for it to recharge, can spend only gold to recharge it right away
