I'm currently level 91 and have: Tavern Yoruichi; Tavern Kisuke; Tavern Komamura; SWP Grimmjow; Yamamoto; C. Orihime.

Which partner should I buy, those two are the ones I'm most "worried" about to whether or not to buy?

Unohana is pretty much essential for hollow soul map fights but that is all she is good for.
