Does Advancing an item make it reset it's stats for example it's Infused spirit level , or it's normal level even.

Nah you keep everything, only the refine gets changed, and the cost of infuse, socket and fortification get higher with the gear level (quality for forti.), gotta complete everything while that piece of gear is still fresh or you'll regret a lot later.
