Save just about everything for the future stuff, when you enter the game you'll understand what you need to save, especially Zanpakuto fortify materials, they'll come later but just remember that 
On servers tho, that just depends on what you're looking for in terms of fun:
Your fun might be simply dominating everyone in the game and having it easy
Maybe no competition at all
Maybe even having an easy time progressing through the game without having to know you got to tackle major predicaments in the future - Pick A new server
Your fun might be being surrounded by stronger people, simply viewing them in your server
Maybe alot of competition
Maybe having a challenging time progressing through the game just having to tackle everything in your path, as you'll be able to see any future task you have to deal with - Pick An old server
New server = Recommended for new players. There will be specific events for servers that have recently opened, so if you ever plan to top up, it will be an easier time for you there to get you ahead very early on. This will also mean you're surrounded by people that are also new in the game, so no-ones at a real disadvantage here right from the start ^^
Butttt in terms of fun, the server is most likely to become inactive, especially if you set yourself ahead of the game very early on, people may simply quit after seeing you there :/
Old server = Probably your toughest choice. You'll be surrounded by old players ofc, can be years of experience with them, but yeah, they're strong and you'll be able to see them, might be nice for you to see ^^
I can guarantee some sort of activeness here. The strong old people may have left but there's at least 1 strong boy left in every server and are active :p At least it won't be empty though, but im not saying it will be full xD There might be a server with say at least 4 people active everyday in these servers, or maybe 10+, and ofc, they have years of experience on their hands, so a difficult task to keep up with them.
But it's not impossible! With simple top ups, you can overtake a server! It's happened on my own server in EU 25 where someone who was 8th place in arena did 1 top up on 1 partner, and straight away became no.1.
It also happened in US 1 (So the very oldest server in the game), a new player joined there, topped up quite the bit and ta-da! At lvl 90 (Whilst the rest are around 130/140+ with years of playing), that person entered the top 5 in arena, and is now no.2 in arena joining at the lvl 110/120 area, can't beat the no.1 there as unfortunately the player is pretty powerful there, but as you can see, it's not the greatest challenge ever ^^
