Basically, to answer all your questions about the event.

Stages under lv10 give 3 crystals, stages level 50 give 3~5 crystals, i am not sure how many crystals you get higher, but as was said by people from the CN version, you can get up to 7 crystals in the higher stages.

You get vitality by default at the rate of 3 every 30 minutes, which means that in 24 hours, you will get 144 vitality, add 6x6 from your girlfriend, thats 180 and 50 from the daily minigame, thats 230 vitality daily, without having to buy it with coupons/gold.

So it ends up like 10x230+150 = 2450 free vitality you can have in 10 event days.

2450x4/5/6/7 = 9800/12250/14700/17150 crystals, depending on each character's level respectively.
2850x4/5/6/7 = 11400/14250/17100/19950 crystals , depending on character level + the restaurant event.

The rest you have to buy with coupons/gold if you want to have a chance at getting rukia.

Unless i missed some way of getting extra vitality , meh go figure, but either way, you have to spend aproximatevily 4500 gold/coupons to get enough for rukia if you are getting 4 crystals per try.

For people who are higher level, respectively you will need less, depending how many crystals you got, luck also plays a factor in this, because you will not always get the same amount of crystals and sometimes, you will not get any crystals at all.
4 crystals per stage = 4500 gold spent on VIT.
5 crystals per stage = 3300gold spent on VIT.
6 crystals per stage = 2500 gold spent on VIT.
7 crystals per stage = 1900 gold spent on VIT. (VIP 8 minimal requirement)
or if the restaurant even last long enough as the event does
4 crystals per stage = 4260 gold spent on VIT.
5 crystals per stage = 3030 gold spent on VIT.
6 crystals per stage = 2210 gold spent on VIT.
7 crystals per stage = 1620 gold spent on VIT. (VIP 8 minimal requirement)

In the end, you might be able to get rukia if you are lv70~80+ and get high crystal drops, but the number is a variable so in the end, you have to rely on blind luck.
VIP 10 can buy VIT 12 times per day x30 VIT = 360 VIT daily if i'm not mistaken x10 days = 3600 VIT
If you are high enough level, and lucky, you will have to buy less VIT than 3600.

Out of these numbers, assuming you are VIP 8~10 and you are high level enough to get 6-7 crystals per fight, you will be able to get rukia if you get high amount of crystals aka luck.
But reallistically speaking, there is no way you will get 7 crystals each fight, to fit into the 1900 gold calculations and VIP 8 minimal requirement.
The realistical variant would be, getting 5-6 crystals per fight on average, which would end up you having to spend somewhere inbetween 2500~3300 gold on VIT. which means that, you need to buy that much VIT in 10 days 2500~3500/10=250~330 vit daily, plus being lv70~80+

Meh, go figure.

In the end, i figured out, that you have to fit into the 6 crystals per stage = 2210 gold spent on VIT.And be VIP 9, to be able to get rukia, otherwise, your chances are slim of getting enough crystals by the end of the event.
Also, getting 6 crystals per stage, is probably impossible at this point in time, because i doubt many people are level 80+.
And even at 80+, i am not so sure that you can get the average of 6 crystals per fight.

on my server us 36 people have barely broken 3k crystal no one is even attempting ( not even the vip ...

lol i would be pissed if they did raise how many crystals we got per fight. All that wasted vit, and wasted gold buying vit and they increased the amount.

I'm lvl 64 and the highest I've gotten a few times was 6. But it's been mainly 3-4 crystals

I'm level 65 and the max I've got it's 7 so yes 60+ it's prob 7 the max you can get

I'm 83, and I've never gotten a 7, and that's doing it in 350 vit chunks at a time.
