You mean the lv70 purples? No you cannotspirit forge them.

Got a stupid question yet obligatory: since everytime you obtain materila chests, I'm lvl 50 and most of time it's related to lvl 50 gears, my question is this: If i let them in my backpack until lvl 70 do they transform into lvl 70 gear items...

No they do not, once you hit lvl 70 you will start receiving material chest (daily activities and Arena) for the lvl 70 gold set which can be spirit forge to the red set. as well as getting them from Instance lvl 70

Material chests from Ryoka Event and Guild Chests will scale with your level, the ones you get from arena and konso with specific gear name, will not.
