Unless you are fighting someone that is going to pretty much 1-shot Sajin, it is much better to block and deal damage to them.  I watched the fight you posted, all the dodging just made the fight drag out longer since you weren't taking full advantage of the really high block rate.  

Watch the BR I posted, then imagine how much less damage I would do if Mayuri wasn't blocking almost every attack to him and was dodging instead.

1 - Sajin is AOE too, he doesn't need countering only to kill the lines behind in the rear.

I will put what I'm trying to say in more exact terms.  After the 1st round, your opponent's Kisuke had 390k hp.  If you block him 2 times, he is dead and not feeding fury to Yama that is keeping you fury restricted.
